Born in Lewisham, London, the 23-year-old prop grew up in Ballinrobe and currently represents Corinthians in the All-Ireland League.
Matthew first began playing rugby aged 6 with Ballinrobe, before joining Galwegians in 2015, and he has represented Connacht at various age grade levels.
Burke made his senior competitive debut for Connacht in 2018 before signing a professional contract with the province in April 2019.
He told Midwest Sport that he had aspirations of playing for Mayo back in his minor days.
